Soybean Polysaccharides is a water-soluble dietary cellulose made from soybean dregs obtained during the manufacture of isolated soybean protein or tofu by enzymatic extraction, separation, purification, sterilization, drying, etc., which is composed of polysaccharides such as arabinogalactan, arabinoglycan, acid polysaccharide, etc., with rhamnus galacturonic acid and high polygalacturonic acid as the main chain. Galactan and arabinose are near bound by side chains. Compared with other biological polysaccharides, galactan and arabinose have lower viscosity, and have the characteristics of dispersion, stability, emulsification and adhesion. In the food industry, it is often used as food fiber reinforcer, foaming agent and food property improver.
